Do you Yo?

Yo! As in Sushi I mean, not throwing around the stringed toy variety (although that's a lot of fun, too).

We're rather partial to Yo! Sushi and this throw-it-together recipe was inspired by Beloved's hunt-the-2nd-helping love of Yo's Chicken Teriyaki.

Never fear, there's no raw fish here. Just a delicious salmon and rice recipe you're sure to love.

If he could, Beloved would be sat at that belt, chopsticks in hand at least once a month but with our appetites, those plates soon add up! It's just as well our nearest Yo! is no longer on the doorstep.

A fan of oriental cooking, I already used many of the ingredients in my Chicken Stir Fry recipe, so after a particularly hefty stack of plates one day, I thought I'd give the Teriyaki a go. It's since become a firm family favourite.

Listed in brackets are my speciality ingredients of choice, which can be purchased from any Chinese supermarket. I get mine from Day In, located in Birmingham's Chinese Quarter, but I'm sure you can also buy them online. Alternatively, you can pick up other brands in your local supermarket, but they do tend to work out more expensive, as they come in much smaller bottles.

WeightWatchers Pro Points Per Person*: 12pts + any additional points for oil

Serves: 2

Cooking Time: Less than 30 minutes

Ingredients:

1 salmon fillet per person (120g fillet = 6pts)
1-2 onions subject to taste, roughly chopped into large chunks
1-2 bell peppers of your choice, roughly chopped into large chunks 
Cooking oil. I generally use spray oil, but I do sometimes like to use a dash of Sesame oil. Just don't forget to point it if you're weight-watching!
1 portion of rice per person, measured to your requirements (60g = 6pts each)

For the Teriyake:

4 tbsp light soy sauce (Pearl River Bridge, Superior Light)
2 tbsp rice vinegar (Amoy)
1 tbsp dark soy sauce (Pearl River Bridge, Superior Dark)
1 clove or 1 tsp lazy garlic (Yes. I am that person)
1 tbsp Chinese rice wine (Silk Road) – In a Chinese supermarket, you'll find Chinese Rice Wine in the alcohol aisle. I know. It hadn't occurred to me either that it is, in fact, a WINE.

Method:

  • Heat a wok or frying pan on a medium heat
  • Mix together the Teriyaki ingredients
  • When the wok is hot, add your oil
  • Place the salmon in the wok, skin side down (this makes it easier to remove the skin)
  • Pour in the Teriyaki sauce and add the onions
  • Cook for a few minutes
  • Turn the salmon and remove the skin (try using a pair of tongs and a fish slice)
  • Continue cooking, turning and covering all the ingredients in the sauce until the salmon is almost cooked
  • Using your nearest utensil (the tongs?), break up/flake the salmon into the sauce
  • Stir in your cooked rice and peppers
  • Cook for a further couple of minutes or so, continuing to turn all the ingredients until the salmon is cooked and all the rice is coated in your delicious Teriyaki sauce
  • Serve immediately
  • Enjoy!
